Sensory Evaluation — Standardized Organoleptic Assessment of Paprika

1. Purpose & Scope

Sensory evaluation provides a structured, documented assessment of the visual, olfactory, and gustatory characteristics of paprika samples. While instrumental methods (ASTA spectrophotometry, CIELAB colorimetry, HPLC) quantify specific chemical attributes, sensory evaluation captures the subjective experience that ultimately determines customer satisfaction.

Scope: All paprika grades and forms (powder, flakes, whole pods). Applicable to incoming inspection, production quality control, and finished product release.

2. Evaluation Environment

3. Panel Qualification

Sensory evaluation should be conducted by a trained panel of minimum 3 assessors (preferably 5–8). Assessors must:

  • Pass basic taste recognition screening (sweet, sour, salty, bitter, umami)
  • Pass odor recognition test (≥ 8 of 12 common spice odors)
  • Not consume food/drink (except water) for 30 minutes prior to evaluation
  • Not use scented personal products on evaluation days

4. Evaluation Protocol

4.1 Visual Assessment

Score each criterion on a 1–5 scale (1 = unacceptable, 3 = acceptable, 5 = excellent).

4.3 Flavor Assessment

Method: Prepare a 0.5% suspension (1 g paprika in 200 mL warm water, 50°C). Stir, let stand 2 min, then taste 10 mL.
